The Vendée-born chef worked at Hôtel Nikko in Paris, the Senate restaurant in Paris, Troisgros in Roanne, Le Richelieu on Ile de Ré, Le Castel Marie Louise in La Baule and Le Château de Mirambeau in Mirambeau.


He’s gone back to his roots in his home region to create the best in surf and turf. His exciting, clever and tasty dishes come to life in your mouth with an explosion of extraordinary aromas and flavours !
