The land and the sea at their best... This is what defines the cuisine of Chef Nicolas Coutand. Behind the sought-after simplicity of the plates, recipes worked and fresh products of the best quality. 

This chef from the region first worked at the Hotel Nikko in Paris, then at the Restaurant du Sénat in Paris, at Troisgros in Roanne, then at the Richelieu on the Ile de Ré, at the Castel Marie Louise in La Baule, or at the Château de Mirambeau in Mirambeau.

He is now in charge of the kitchens of the Restaurant Les Genêts and offers surprising flavours, with a lot of finesse.
